Fermentation took place in open-top fermenters, gently plunged to coax out colour and flavour, before spending 12 months maturing in seasoned 2000L foudre. No fining or filtration.
In the glass think classic cool-climate Shiraz – white pepper spice, blue fruits, and a line of fresh, crunchy acidity.
